The name comes from the shape of the barley rasks, that reminds the eyes of the owl.
We pass the tomato over the thick opening of the grater into a bowl and we add half quantity of olive oil, sea salt and oregano. We sprikle the rusks with olive oil and with a spoon we spread the tomato. Then we put on top the soft cheese, some more olive oil and the rest of the oregano.
